From November 1st, Brovarnia Gdańsk invites you on a unique culinary journey full of autumn flavors, with the star being goose. This prized local specialty from Kashubia is prepared with the utmost care by the chef of Brovarnia and appears on the menu in various forms. Thanks to the new dish proposals, guests can indulge in the richness of aromas and flavors that reflect the character of golden Polish autumn.
For starters, we suggest goose liver pâté, highlighted by a subtle addition of cognac, crunchy pistachios, and pumpkin and sunflower seeds. This refined combination enriched with pickled pumpkin and original pumpkin sponge makes for an excellent introduction to the subsequent feast.
Another proposal is royal goose broth. This deeply flavored broth prepared from goose meat, aromatic vegetables, and port is served with homemade noodles, making it a warming dish perfect for cooler days.
The main courses are not lacking in culinary surprises. Brovarnia offers its guests an exceptional Kashubian rosemary goose, roasted whole. Served with traditional potato dumplings, red cabbage, and aromatic sauce, it becomes a culinary feast for larger groups, suitable for about 12 people. Orders for this item must be placed at least two days in advance.
For poultry lovers, there is also confit goose leg served with cranberry sauce, potato puree, and glazed beets with a hint of honey and orange. An alternative to traditional goose is pike-perch with goose crunch, served with dill sauce, bulgur wheat, and pickled pumpkin. Dried goose gives this fish a unique aroma, perfectly combining with autumn vegetables.
For dessert, Brovarnia offers traditional St. Martin's croissant, filled with a rich poppy seed filling, crowning this culinary feast.
